Behind Bars was brought in quite yearly to the Sommerro project. In the Summer of 2019, three years before opening, we began working closely with the interior architects, Choice Hotels and Plah/Ahaan ownership to define the brief of each bar: the workflow and therefore space and footprint that was needed to execute in each environment.

There was a total of 6 venues we delivered for this project: three bars on the ground floor: Ekspedisjonshallen, To Søstre and Plah & Ahaan. Two bars on the third floor: TAK Oslo and the Outdoor Terrace Bars, and one bar in the basement event hall: Lysverker Scene.
All the concepts were quite different, so each bar is completely unique to the venue. However, we did try to keep a red thread running through each cocktail station over the entire project - we knew some of the staff would be moving and working between the different venues, so we wanted to make sure they were always comfortable with the station and no "re-learning" would be necessary when moving from venue to venue.
